GLOSSARY
beriberi - disease caused by a deficiency in thiamin,(vitamin B1)
deficiency- being deficient, lack of, shortage
diabetes - a breakdown in the body's ability to absorb carbohydrates caused
by the deficiency of insulin, which results in abnormally high
levels of sugar in the blood and urine.
disease - unhealthy condition in an organism
emotion - strong feeling of any kind
essential nutrient - nutrient that can only be obtained by eating foods that
contain them.
excess - the exceeding of proper established limits
food allergy - an immune system response to a food that the body mistakenly
believes is harmful.
food intolerance - a digestive system response rather than an immune system
response. It occurs when something in a food irritates a
person's digestive system or when a person is unable to
properly digest or breakdown, the food.
glucose - building blocks of carbohydrates
hormone - chemical messenger secreted by a variety of glands in the body in
response to altered conditions. Each affects one or more target
tissues or organs and elicites specific responses to restore
normal conditions.
insulin- hormone secreted by the pancreas in response to high glucose levels.
lifestyle - refers to patterns in which people live, spend time and money.
obesity - body weight 20% or more above desirable weight for height.
pancreas - a large gland secreting a digestive juice into the intestine and
also producing insulin.
rickets - A disease characterized especially by soft and deformed bones.
Rickets is caused by the body's failure to use calcium and
phosphorus normally due to inadequate sunlight or vitamin D.
Rickets primarily affects young children.
scurvy - vitamin deficiency disease characterized by bleeding gums, tooth
loss, and death.
synthesize - the production of a substance by the union of chemical
elements, groups, or simplier compounds.
