Mrs. Kneifel has an undergraduate degree in Home Economics (Education and
Nutrition concentration) from Illinois State University, and a Master's
degree in Human Resources from the University of Illinois. As an
undergraduate and as a graduate student she worked in the child development
laboratories, and her master's degree research was on early childhood eating
preferences. She is also a member of the American Dietetic Association and is
a Registered Dietitian.
That students would gain the skills necessary to make healthy choices
in every area of their lives.
